- Wash sweet potatoes, (DON'T PEEL) cut in half and place on trivet in InstantPot.
- Add 1-2 cups water-close lid-seal valve-manual-10 minutes.
- You can either do a quick release or natural release.
- When done, remove potatoes with a pair of tongs and place in bowl or cooling rack. When they've cooled off some, peel the skins right off.
After that, I placed them in my favorite stand mixer, mixed them right up and then went from there with the recipe.
I repeated the same technique the exact same way with regular potatoes (which didn't peel off quite as easy, but still easily), and then used them in our favorite Paula Deen's Twice Baked Potato Casserole.
Thanksgiving dinner had never been so easy!!
